Maine Blueberry Jam

Ingredients:

  • 2 cups - Wyman's frozen blueberries

  • 1/2 cup - Sugar

  • 1 cup - Fresh Maine blueberries

 Instructions:
1. Mix and cook down for 30 min max at medium heat until reduced and the flavors get intensified

** If you’d like to enhance the flavor this is the perfect time to do so! …with thyme, basil, or fresh mint; just enough to add an extra layer of flavor.

2. After this cools down, add 1 cup of fresh blueberries
** Chef Ilma likes hers cut in half for a better look and a distinctive bite, ie. mouth feel!

3. Set aside

Filling

Ingredients:

  • 1 cup - Cool Whip

  • 1/2 cup - Whipped cream cheese, room temperature works best

  • Vanilla

Instructions:

1. Mix them together by folding, to keep the airy consistency

2. Add vanilla to taste and a lemon, orange or lime zest

The dough

  • Puff Pastry - pre-made from Hannaford

Instructions: Follow the steps on the package, and before baking it makes the cut outs you would like.
**They could be rectangles or squares for a no waste recipe, or use a cookie cutter for more fun shapes! Just remember that you need 3 identical cookies for each portion.

Final Assembly:
• Three layers of the pastry
• Two layers of filling
• 2 layers of the Wyman’s wild Maine blueberry compote

• And repeat until your Napoleon is layered as high as you desire!

You don’t have to cook fancy or complicated masterpieces - just good food from fresh ingredients.
